Lee's Ghee is proudly made in Quebec, Canada, which is renowned for its small dairy farms. The cows are pastured during the warmer months, when the temperature allows, and have a diet of mainly grass, hay, fodder and silage. The cows' diets are free from hormones, pesticides, herbicides and antibiotics all year round. Our Ghee is Certified Organic, and all of our processing techniques and equipment from farm-to-jar adheres to rigorous Canadian organic standards. It is very important to consume organic ghee as any toxins in the cows' diets will accumulate in the milk fat.
Lee's Ghee is made by simmering butter on low heat for anywhere between 8 to 12 hours, depending on the size of the batch. Using low heat ensures that the delicate fats and fat-soluble vitamins in the ghee remain don't get denatured or destroyed. When the ghee is ready, the milk solids from the butter have completely separated from the ghee and caramelized, which gives the ghee a delicious, nutty flavour. The ghee is then strained twice to remove all milk solid residues. While the ghee is still warm, we infuse it with other organic ingredients such as turmeric, vanilla and maple, and then hand pour the ghee into jars. The entire process to make a jar from start to finish takes 2 full days.

Organic Maple Syrup
To make our Maple Baby: Canadian Maple-Infused Ghee, we use organic maple syrup from a small family-run producer in Quebec, Canada. Quebec has developed a rigorous ranking and quality inspection process to ensure all maple syrup is pure and unadulterated. The maple syrup is Certified Organic, which means that each stage of processing, from the development of the sugar bush to the storage of the finished product adheres to strict Canadian organic standards.
Organic Turmeric and Black Pepper
To make our Gold Standard: Turmeric-Infused Ghee, we use Certified Organic and non-irradiated turmeric and black pepper. Turmeric root is traditionally used in Ayurveda and is known to be good for digestion, skin problems, and inflammation. Combining turmeric with ghee and black pepper increases the bioavailability of curcumin (the active ingredient in turmeric). Although modern medical research has recently proven the health benefits of consuming turmeric, Ayurvedic medicine has been aware of the root's benefits for over five thousand years.
Organic Za'atar Herbs and French Grey Sea Salt
To make our Za'atar Star: Middle Eastern Spiced ghee, we use our own blend of Certified Organic and non-irradiated herbs, which includes thyme, oregano and sumac, along with Maison Orphée French grey sea salt. Some researchers are beginning to speculate that the carvacrol, the phenol found in thyme and oregano, may actually have cognitive and mood-enhancing properties. Sumac, thyme and oregano are all chock full of flavonoids, an important dietary source of antioxidants.
Organic Raw Vanilla Beans
To make our Noisette: Vanilla Brown Butter Ghee, we cook the butter at a higher temperature than the other flavours which gives it a nuttier flavour. This recipe is based on the French style of clarified butter, called 'Beurre Noisette', which literally translates to 'hazelnut butter', due to the fragrant, nutty flavour created. We infuse it with pure vanilla bean sustainably grown and harvested in Papua New Guinea. Each vanilla bean is the hand-pollinated fruit of the Vanilla Ahitensis orchid, which opens only one day a year.
