Adapted from a recipe in the My New Roots cookbook, I whipped up this super simple crumble that is a total crowd-pleaser. You can use whatever fruit is in season - apples, peaches and strawberries are all great options.
Pear and Berry Crumble
Serves 2
Ingredients
2 ripe pears, chopped into 1-inch cubes
3 cups fresh blackberries
3 tablespoons pure maple syrup
1 3/4 cups rolled oats
1/3 cup pure maple syrup
1/2 cup chopped raw walnuts
2 tablespoons sprouted spelt flour
1/4 teaspoon sea salt
1/3 cup Lee's Ghee, chilled (Plain Jane or Brown Butter)
Directions
Preheat the oven to 350°F.
Place the pears and berries to a 9-inch baking dish. Add the maple syrup and cinnamon with the fruit. Stir to combine.
In a large bowl, combine the oats, maple syrup, walnuts, spelt flour and salt. Add the chilled ghee and, using your hands, combine until the mixture is crumbly. Spread the crumble topping over the fruit.
Bake for 25 to 30 minutes, until golden brown. Serve warm.
