Sumac Roasted Chickpeas

Chickpeas are a versatile, protein-packed legume. When roasted, they become incredibly crunchy. The butteriness of ghee and lemony tang of sumac in this recipe really make the flavours pop! Enjoy them as a snack or on top of salads, soups and curries.

Sumac Roasted Chickpeas


Gluten-Free, Dairy-Free, Vegetarian


Prep Time: 10 minutes

Cooking Time: 30 minutes

Makes 2 cups



  • 2 cans (398 mL) organic chickpeas, drained and rinsed
  • 2 tablespoons Lee’s Ghee (Plain Jane or Gold Standard), melted
  • 1 teaspoon sumac
  • 1 teaspoon paprika
  • ½ teaspoon sea salt



  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. Place the chickpeas on a clean kitchen towel and pat dry. The more moisture that is removed, the crispier the chickpeas will get! 
  3. Transfer the chickpeas to a medium bowl. Add the melted ghee and toss to coat. Spread onto the prepared baking sheet. 
  4. Bake for 25 to 30 minutes, tossing halfway through baking, until the chickpeas are golden brown and crispy.
  5. Add the sumac, paprika and salt. Toss to combine.
  6. Allow chickpeas to cool completely. Store in an airtight container at room temperature for up to 3 days.
