Stewed Pears with 'Noisette' Ghee
For a nourishing Autumn breakfast, I like to make stewed apples or pears, with warming spices and Noisette (vanilla brown butter) ghee. Ghee helps break down the fibrous part of the fruit to make it easier to digest. I leave the skins on as they have lots of nutrients like quercetin, which is an anti-cancer and anti-again compound. The stewed fruit is great on oatmeal or on its own and any leftovers are good to have on hand as a quick snack or sugar substitute for baking. Here's my go-to recipe for chilly Autumn mornings.
- 3-4 ripe pears
- 1 teaspoon 'Noisette' ghee
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
Chop pears into cubes and put them into a small pot. Add water to the pot to just cover the pears. Add spices and ghee and simmer over medium heat until soft (about 15 minutes). Serve over oatmeal, yogurt, or eat on its own!
