Roasted Garlic and Herbed Potatoes

Getting roasted potatoes to be soft and fluffy on the inside, yet crispy and golden on the outside, is the ultimate culinary achievement. By using ghee, fresh herbs and a 3-step cooking process, you'll end up with the perfect potatoes, every time, to satisfy those weeknight potato cravings. 

Ingredients

  • 4-6 yellow potatoes, peeled
  • 2 tablespoons Organic Za'atar Star Ghee, divided 
  • 1-2 tablespoons apple cider vinegar
  • 1 sprig fresh rosemary, or 1 tablespoon dried
  • 1 sprig fresh oregano, 1 tablespoon dried
  • 2 cloves garlic, smashed
  • Sea salt, to taste
  • Black pepper, to taste

Instructions

Preheat oven to 375 degrees.

Boil potatoes in salted water for 10 minutes. Remove from pot, and place in a large bowl. Shake them around so their edges get fluffed. Place them in a roasting pan with 1 tablespoon melted Organic Za'atar Star Ghee, sea salt and black pepper. Toss to coat evenly. Place in the oven for 30 minutes and set the timer. 

In a small bowl, combine garlic, rosemary, oregano, remaining tablespoon of ghee, apple cider vinegar and a pinch of sea salt and black pepper. When the timer goes off, drizzle the vinegar mixture over the potatoes, and toss to coat. Place the potatoes back in the oven for another 25-30 minutes or until skins turn golden brown and a toothpick slides out easily. 

Season to taste and enjoy!
