Prep time: 15 minutes

Cook time: 30 minutes

Serves 4

Ingredients

  • 1.5 pounds of heirloom carrots
  • 2.5 tablespoons Lee’s Ghee (Plain Jane, Great Maple or Brown Butter)
  • 1/3 cup walnuts, finely chopped
  • 1/3 cup parsley, finely chopped
  • 2 tablespoons orange juice, freshly squeezed
  • Sea salt and pepper, to taste

Directions

  1. Preheat the oven to 400°F.
  2. Place carrots on a baking sheet with 1 tbsp ghee, salt and pepper, toss to combine. Line the carrots in a single layer and place in the oven for 20 minutes.
  3. In the meantime, heat a pan over medium heat and add the chopped walnuts. Cook, stirring occasionally for 5 minutes. Remove from heat and allow to cool.
  4. In a small bowl, combine the 1.5 tbsp melted ghee, orange juice, parsley and walnuts.
  5. After 20 minutes in the oven, stir the carrots and return to the oven for an additional 10 minutes or until fork-tender.
  6. Remove the carrots from the oven and top with parsley and walnut mixture and serve immediately.
