Grilled Corn with Chili Herb Ghee

Nothing says summer quite like fresh grilled corn. This recipe is inspired by the Mexican corn, elote. We skipped the dairy in this version but kept all the familiar and delicious flavours of lime, chili and cilantro. One thing to remember when consuming corn is to try to buy organic and non-GMO, to ensure you're getting the highest quality product. 

 

Grilled Corn with Chili Herb Ghee

 

Gluten-Free, Dairy-Free, Vegetarian, Whole30

 

Prep Time: 10 minutes

Cook time: 15 minutes

Serves 6

 

Ingredients

  • ¼ cup plus 1 tablespoon melted Lee’s Ghee, divided (Plain Jane) 
  • 2 tablespoons finely chopped cilantro
  • Juice of half a lime
  • ¼ teaspoon chili powder
  • ½ teaspoon sea salt
  • Cayenne pepper, to taste
  • 6 ears of corn, shucked

 

Directions

  1. Heat a grill to medium-high heat.
  2. Make the Chili Herb Ghee In a bowl, mix 1/4 cup of melted ghee, cilantro, lime juice, chili powder, salt, and cayenne pepper. Set aside.
  3. Grill the Corn Brush the corn with the remaining 1 tablespoon of melted ghee and place on the grill. Grill the corn, turning often, until tender and charred in some places, 10 to 15 minutes.
  4. Transfer the corn to a serving platter. Serve with the Chili Herb Ghee.
