Crispy Roasted Garlic Chicken with Za'atar Star Ghee

Using ghee to baste the chicken makes the skin crispy and golden, and utterly delicious. 

Crispy Roasted Garlic Chicken with Za'atar 


  • 1 medium-size free range, organic chicken (3-4 pounds is good)
  • 1 head of garlic, minced 
  • 2 tablespoons Organic Za'atar Star Ghee, melted
  • sea salt and freshly ground black pepper, to taste
  • a few springs of thyme


Preheat oven to 450 °F.
Remove the giblets from the chicken, then rinse with cold water inside and out. Pat dry with a towel. Carefully separate the skin from the meat (near the neck) and stuff half the minced garlic underneath the skin. Stuff the other half of the garlic in the cavity. Pour melted ghee all over the chicken to coat and rub with salt and pepper. Add a couple springs of thyme on top. 

Place a sheet of tin foil in a roasting pan and put the chicken on top, breast side down. Roast chicken for 25 minutes. Remove from oven, flip the chicken over so the breast is facing up and roast for another 15-20 minutes. Turn up temperature to 500

°F and roast for an additional 10-20 minutes until skin is golden and crispy. Remove from oven and cool for 20 minutes before serving.
