Coconut Lemon Energy Balls

These energy balls are grain-free, easy to prepare and are loaded with nutrients and healthy fats from our ghee, coconut, chia seeds, and cashews. The dates in this recipe provide sweetness along with antioxidants and fibre. For an added boost of protein, we love adding a scoop of collagen. Make a batch and have them on hand for easy snacking during the week!

 

 

Coconut Lemon Energy Balls

 

Gluten-free, Dairy-Free, Whole30, Paleo-Friendly

 

Prep time: 10 minutes

Makes 12-15 energy balls

 

Ingredients

  • 1 cup soft Medjool dates (8-10 dates)*
  • 1 cup raw cashews
  • 1 tablespoon Lee’s Ghee (Plain Jane, Great Maple, Brown Butter or Good Fat Blends)
  • 1 teaspoon lemon zest
  • 1 teaspoon fresh lemon juice
  • 1 cup unsweetened shredded coconut, divided
  • ¼ cup chia seeds
  • Pinch of sea salt
  • 2 tablespoons collagen peptides (optional) 

 

Directions

  1. Add the dates, cashews, ghee, lemon zest, lemon juice, ½ cup coconut, chia seeds, salt and collagen (if using) to a food processor and process until combined.
  2. Shape into 1-inch balls and roll in ½ cup of coconut to coat. Place in the fridge for 30 minutes to set before eating.
  3. Store in an air-tight container in the fridge for up to one week or longer in the freezer.

 

*Note: If the dates you are using are not soft, you can soak them in warm water for 10 to 15 minutes before using them.
