Broiled Asparagus with 'Plain Jane' Ghee

April 26, 2017 Lee Dares

Eat your ABC's! Asparagus season is just around the corner, so here is a simple, delicious recipe that uses the season's most sought-after veggie. In addition to vitamins A, B and C, asparagus is a great source of folate and fibre. The secret to making this dish stand out is to buy the thinnest stalks of asparagus you can find. Ghee adds amazing flavour to the dish and can withstand the heat from the broiler too!

  • 1 bunch of thin, fresh asparagus
  • 1 tablespoon Organic Plain Jane Ghee
  • 1/4 cup Parmesan or Pecorino cheese, grated
  • sea salt and freshly ground black pepper, to taste

Turn on the broiler on your oven. While it is heating up, blanch asparagus in a medium pot of boiling water for 2-3 minutes until asparagus softens slightly but is still crisp and vibrant green. Place blanched asparagus in a baking dish and dot some ghee all over. Sprinkle the grated parmesan on top and add salt and pepper. Broil for 2-3 minutes or until parmesan turns golden brown. Serve immediately and enjoy.
Makes 4 servings.
